GARLIC SCAPES are an edible part of the garlic plant harvested late in June. Garlic bulbs are harvested from underground in late July or early August.
Scape Tips

Always remove the enlarged tip at the end of the smooth stalk.

Sautéed garlic scapes are similar to a garlicky green bean and are a excellent accompaniment for meat or chicken, or added into a stirfry. Sauté them in olive oil until tender. Season with salt, pepper and lemon juice.

Finely chopped scapes with bread crumbs, cheese and parsley make a great stuffing for tomatoes, mushrooms or zucchini boats.

Sauté scapes in olive oil with sun-dried tomatoes and olives as a pasta sauce.

For the best garlic mashed potatoes, chop scapes finely and sauté them in butter. Add to mashed potatoes with a little cream.

Try grilled scapes as an accompaniment to a meat dish. Place scapes in foil, liberally sprinkle with olive oil, salt and pepper. Bundle up and grill for 10 minutes or until soft and golden.

Using a food processor, blend the following items in sequence:

Two cups of raw scapes that have been previously chopped into two inch pieces,
One cup of slivered almonds (or other nuts or seeds),
One cup of olive oil,
One cup of parmesan cheese.
Enjoy on pasta, BBQ, and raw or cooked veggies.
